Picadillo (Beef Hash) For Dinner

Tonight menu was Beef Hash, tomatoe salad with olive oil and apple cider vinegar.  A few pieces of garlic toast that we had left were also baked.

Picadillo (Beef Hash)

1/4 cup oil

1 onion

1 green pepper

1 clove garlic

1/2 lb ground beef

1/2 lb ground pork

1/4 lb ground ham

3/4 cup capers

1 tsp salt

1/8 tsp pepper

1/2 cup tomato sauce

1/4 cup dry wine

Heat oil and saute minced onion, crushed garlic and minced green pepper.  Add the meat and cook for a few minutes, stirring contantly to avoid sticking.  Add the remaining ingredients and cook over medium heat for approximately 20 minutes. Serves 6

This is a typical cuban recipe at my mom’s house.  My grandmother was the best at making this, her’s tasted superb.  I try to make it the same and can’t come even close.  I will keep trying though can’t give up.  I would pick her brain more but she is 92 now and doesn’t remember much.

We all love a nice tomatoe salad with vinegar and olive oil yum.

Sandwich Spread (Pasta de Bocadito)

Put about 1/2 lb of ham in your food processor with half block of cream cheese blend till like a paste. Put a few spanish olives in the mix as well, just a few at a time so it doesn’t get too salty. Spread on small buns to make small sandwiches.

In The Mood For Caramel

My 6 yr old has been asking for us to make some of these for a while now.  Here is our try at it, pretty descent.

Last time I made these was quite a while ago.

Pumpkin Coconut Cream Bread

Pumpkin Bread

2 cups flour

2 cups sugar

2 (3.5 oz) packages coconut cream pudding (either instant or cook and serve)

1 tsp  baking soda

1 tsp salt

1 tsp cinnamon

1  1/ 4 cup  vegetable oil

5 eggs

2 cups  canned pumpkin

In a large bowl, mix flour, sugar, dry pudding mix, baking soda, salt and
cinnamon. In another bowl, mix together oil, eggs, and pumpkin until just
blended. Stir the flour mixture into the egg mixture and mix until just
blended-do not overmix.

Pour into two greased and floured loaf pans.

 Bake at 350 for about 1 hour or until tested done.

 Cool for 5 min before removing from pans.

Reading It Is Fun

We are enjoying our Alphabet Island Reading Program very much.  I am so glad I found it and took the time to try it.  Our reading has taken off quickly as we learn each day.

I highly recommend it as it has worked out great for us.

Sazon Complete Seasoning

Sazon Complete

- 4 tbs salt

- 3 tbs onion powder

- 3 tbs garlic power

- 2 tbs oregano powder

Put all ingredients in my empty Sazon container.  This seasoning is not available in my home state.  I could ask my mom to send me some, but I chose to mix it up myself.
